I created this recipe myself for my “Cooking With Jessica” adaptive cooking class that I broadcast on Zoom. Originally I did this recipe with my class on June 25th 2020. I found this recipe to be so easy and delicious that it is great for kids or adaptive cooking techniques or cooking therapy.
Ingredients:
- 1 ripe avocado (see bottom of recipe for tips on how to get a ripe one)
- Juice of one lime
- 3 tbsp. salsa
- 2 tbsp cilantro
Equipment:
- Mixing Bowl (1 quart or bigger)
- Spoon
- Lemon Squeezer (optional)
- Serving bowl ( 1 quart or bigger)
- Potato Masher
Instructions:
- Add avocado to bowl and mash with potato masher
- Add 3 tbsp. of salsa
- Chop up 2 tbsp. of cilantro and add that in
- Squeeze the lime over the bowl
- Put into serving bowl and enjoy
How to get a ripe avocado
- Get the avocado a few days before you are planning on using it.
- Try to get the ones that have a darker color and feel soft
- If it is not ripe put in room temperature for a few days.
