Easy Guacamole Recipe by Jessica

I created this recipe myself for  my “Cooking With Jessica” adaptive cooking class that I broadcast on Zoom.  Originally I did this recipe with my class on June 25th 2020.  I found this recipe to be so easy and delicious that it is great for kids or adaptive cooking techniques or cooking therapy.

Ingredients:

  • 1 ripe avocado (see bottom of recipe for tips on how to get a ripe one)
  • Juice of one lime
  • 3 tbsp. salsa
  • 2 tbsp cilantro

Equipment:

  • Mixing Bowl (1 quart or bigger)
  • Spoon
  • Lemon Squeezer (optional)
  • Serving bowl ( 1 quart or bigger)
  • Potato Masher

Instructions:

  1. Add avocado to bowl and mash with potato masher
  2. Add 3 tbsp. of salsa
  3. Chop up 2 tbsp. of cilantro and add that in
  4. Squeeze the lime over the bowl
  5. Put into serving bowl and enjoy

How to get a ripe avocado

  • Get the avocado a few days before you are planning on using it.
  • Try to get the ones that have a darker color and feel soft
  • If it is not ripe put in room temperature for a few days.
