Quick and Delicious Breakfast Recipes for College Students

Hi everyone, today I am writing about some simple and delicious breakfast recipes. Being a college student, I have found that I am in a rush  in the morning and do not have much time to cook a complicated breakfast. It is sometimes hard to find recipes that are quick and delicious. I tried a bunch of recipes and narrowed it down to 7 of the best ones.  Some of them are ones I found online and modified, and others are my own recipes that I have created myself. Some of these recipes may take longer to make than others. If you do not have time to make a recipe you can prepare the recipe the night before and just warm them in the morning. Now let’s get started.

 

     Avocado Toast

This is a recipe I created for avocado toast. I love easy and delicious this recipe is. It is one of my favorites go to breakfast recipes. I love putting Everything bagel seasoning on it. It adds a lot of good flavors. Here is the recipe:

Ingredients:

  • 1 Tbsp. Everything but the bagel seasoning ( or to taste)
  • 1 slice bread of your choice ( I use sourdough)
  • ½ of an avocado
  • 1 tbsp. parmesan cheese

Instructions:

  1. Put bread in toaster( if you are using larger pieces of bread you may want to break it half, so it gets crispy).
  2. Spread the ½ avocado on the  bread.
  3. Add Everything Bagel Seasoning and cheese on top of the toast.
  4. Enjoy

Blueberry Muffin Mug

 Ingredients:

  • 1/4 cup + 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/4 cup milk, at room temperature
  • 2 tablespoons oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • Coarse sparkling sugar, optional garnish

Instructions:

  1. In a small bowl, whisk together flour, sugar, and baking powder until thoroughly, completely combined, with no streaks of any ingredients remaining. Mix  in milk, oil, and vanilla until the batter is smooth. Stir in blueberries and pour batter into a microwave-safe mug. Sprinkle with sparkling sugar, if desired.
  2. Microwave on high for 1 1/2 to 2 minutes, or until  the muffin is done to your liking.
  3. Allow to cool for a couple of minutes before serving.

Granola In a Mug

I love this recipe. It is one of my favorite ones I made during this experiment. You can make so many variations of this recipe by adding in different mix ins to make different flavors. Just do whatever sounds good to you. You can also double the recipe to have leftovers for later. Here is the recipe:

Ingredients:

  • 2 tsp. Canola oil
  • 2 tsp. water
  • 1/4 tsp. vanilla extract
  • 2 tsp. honey or maple syrup
  • 5 tbsp. rolled oats.
  • 2 tbsp. toppings of your choice (ex: nuts, cinnamon, or dried fruit)

Instructions:

  1. Add the  oil, water, vanilla extract and honey or maple syrup to a mug or large cup. Microwave on high for 20 seconds until the oil has melted.
  2. Add the oats, nuts and seeds to the mug and stir well.
  3. Microwave on high for between 1.5 and 2 minutes in 30 second intervals, stirring well each time, until the oats start to brown.
  4. Transfer the granola onto a plate and spread out. This helps it to crisp up.
  5. 5. Add the raisins.
  6. Serve immediately or keep in an airtight jar for up to 5 days.
  7. Enjoy

 

Peanut Butter Overnight Oats

I love this recipe because you can make it the night before and then it will be ready by morning.

Ingredients:

  • 1/2 cup rolled cut oats.
  • 1/2 cup milk
  • 1 tablespoon peanut butter
  • 1 teaspoon maple syrup
  • 1 teaspoon chia seeds, optional
  • Mason jar with lid
  • ½ cup raspberries

Instructions:

  1. Add in the dry ingredients—oats and chia seeds (if desired)—to the Mason jar first.
  2. Pour in the milk, then add in the peanut butter and maple syrup.
  3. Mix the ingredients together until the peanut butter has been evenly added to the oat mixture. Make sure all the oats are submerged in the milk.
  4. Seal the lid and place the oats in the refrigerator.
  5. The next morning, put raspberries on top.

Lemon Strawberry Cheesecake Oats

Ingredients:

  • 1/3 cup old fashioned oats
  • 1 cup milk
  • 1/4 tsp. vanilla extract
  •  1 tbsp. cream cheese
  • 1/2 tbsp. honey/maple syrup
  • 1 tbsp. lemon zest
  • 5 strawberries pureed

Instruction:

  1. Cook Oats with milk and vanilla in microwave for about 2-3 minutes.
  2. Mix in cream cheese, honey and lemon zest, top with strawberry puree.
  3. Enjoy

 

Quiche in a mug

This is my favorite recipe that I found in this experiment. I made mine with Swiss cheese and spinach, but you can use any mix-ins you want.

Ingredients:

  • 4 tablespoons all-purpose flour
  • ⅛ teaspoon baking powder
  • 1/16 teaspoon baking soda
  • ⅛ teaspoon salt
  • 3 tablespoons milk
  • 1 tablespoon olive oil
  • 1 egg , beaten.
  • 2 tablespoons milk (or water)
  • 2 tablespoon Swiss cheeses
  • 1 tablespoon spinach , chopped.

Instructions:

  1. Mix the flour, baking powder, baking soda and salt together in a microwavable mug
  2. Add in the milk and oil and mix together. There might be some lumps but that is ok. This is the pastry layer of your quiche.
  3. On top of the “pastry layer” add in your egg, milk (or water), cheese and spinach . Mix all together gently while not disturbing the pastry layer.
  4. Microwave for 1 minute 20 seconds – 2 minutes, or until it rises up and the egg is cooked and firm on top.
  5. Enjoy straight away
