Recipe – Microwave Cheesy Scrambled Eggs in a Mug

This is the recipe from my online cooking class originally broadcast May 28, 2020, with the Friendship Circle.  If you attended and did not get the e-mailed version, here it is again. This microwave mug cooking recipe makes a delicious meal or snack and is suitable for adaptive cooking techniques, or anyone!

Ingredients:

      • 2 eggs
      • Salt
      • Pepper
      • 1 tbs. Water
      • Cheese

Equipment:

      • Large microwave-safe mug (12-16 ounces)
        • (if you do not have this size mug, you can use a microwave-safe bowl)
      • 2 forks (one for raw egg one for cooked)
      • Mixing Bowl
      • Microwave

Instructions:

      1. Crack eggs in bowl
      2. Beat eggs so that the whites and yolk are combined
      3. Add in a little salt & pepper to your taste
      4. Mix more
      5. Add 1 tbsp water
      6. Mix some more
      7. Put oil on the mug to prevent sticking
      8. Carefully transfer the mixture to a mug
      9. Put in microwave
      10. Microwave on high for 40 seconds
      11. Stir
      12. Microwave for 30 more seconds
      13. Enjoy!
